In an era where food waste and food insecurity plague communities globally, innovative solutions are imperative. Our project aims to address these pressing issues by tapping into an often overlooked resource: overripe bananas. Street vendors often discard bananas past their prime, contributing to the alarming levels of food waste. However, we see an opportunity in this surplus. By purchasing overripe bananas from street vendors and utilising them in the production of wine, we not only mitigate food waste but also create a valuable product with the potential to generate income and foster sustainability. This initiative stems from the recognition of the interconnectedness between food waste and food insecurity. While millions suffer from hunger worldwide, vast amounts of edible food are wasted daily. My skills in lab work, research, and quality control ensure that our product meets high standards of safety and taste. 2. Lehlogono Mogashoa :My partner, a final-year BSc Biochemistry student, offers extensive knowledge in biochemical pathways and the nutritional analysis of our product. Their expertise in enzyme activity, metabolic processes, and product formulation is vital for optimizing the flavor and health benefits of our wine.
