▎Project: Making "Unga" from Dried Banana Pea for Porridge This project aims to develop a process for making a nutritious and palatable "unga" (flour) from dried banana pea, suitable for making porridge. This project is relevant for communities with access to banana pea and seeking alternative sources of food. Project Phases: Phase 1: Research and Development • Literature Review: Research existing methods for processing banana pea and making flour from other legumes. Identify potential challenges and opportunities. • Ingredient Sourcing: Secure a reliable source of dried banana pea. Analyze its nutritional content and potential allergenic properties. • Pilot Production: Develop and test different methods for grinding dried banana pea into flour. Experiment with different drying techniques, grinding methods, and flour fineness. • Porridge Recipe Development: Create various porridge recipes using the banana pea flour, focusing on flavor, texture, and nutritional value. This project has the potential to contribute to food security,nutrionla well being and economic empowerment in communities with access to banana pea.it can also provide a sustainable and accessible source of protein and other essential nutrients.

Nutrional benefits : high in fiber ,rich in protein , source of vitamins and minerals, low in far Sustainability and accessibility: waste reduction, local sourcing, affordable alternative It is also gluten free,making it a suitable option for individuals with gluten sensitivities or celiac disease.

The targeted population is locally communities that waste and throw banana pea as a waste though can produce porridge that can serve a greater population
